Skilley Cheesy Chicken & Rice
INGREDIENTS
- 1 T olive oil
- 1 1/2 lb chicken breasts (4-6)
- 1 can of Cream of Chicken
- 1 1/2 cup of water
- 1/4 t. paprika
- 1/4 t. black pepper
- 2 cups broccoli
- 1 1/2 cup uncooked instant rice
- 1/2 cup shredded cheddar cheese
- Heat the oil in a 10in skillet over medium-high heat.
- Add the chicken and cook for 10 minutes or until it is well browned on both sides.
- Remove the chicken and set aside.
- Stir in soup, water, paprika, and black pepper heat to a boil.
- Stir in broccoli and rice and then return the chicken with additional paprika and black pepper.
- Top with cheese.
- Cover and cook for 5 - 10 minutes or until chicken is cooked through and the rice is tender.
